- 5–6 spoons mustard oil
- Lemon juice
- Pickle masala
Preparing the Chokha
Chokha is the smoky vegetable mash served with litti. It is simple to prepare but full of flavor.
First, boil the potatoes in a pressure cooker until they become soft and easy to mash.

Roast the brinjals and tomatoes directly on the gas flame. If possible, roasting them on a traditional chulha adds a better smoky flavor.

Once roasted, allow them to cool slightly and peel off the skin.
Peel the boiled potatoes as well.
Place the roasted brinjal, tomatoes, and potatoes in a large plate.

Mash everything together using your hands or a spoon, then add finely chopped garlic, green chillies, chopped onions, salt according to taste, fresh chopped coriander leaves, and finally pour mustard oil for authentic flavor.
